One of the appetizers I’m doing for the event is little aloo chaat bites that you can just pop in your mouth. Chaat is one of my favorite street foods in Pakistan because it is so intensely flavorful and tangy.
Aloo chaat is a mix of boiled potatoes, green chutney, tamarind chutney, chaat masala, spices, cilantro, raw onion, tomatoes, and some lime. It is sweet, salty, spicy, and tangy- truly the perfect combo.

Ingredients:
2 potatoes cut into small pieces
1/2 an onion finely diced
1 tomato finely diced
3 tbsp chopped cilantro
2 tbsp tamarind chutney (recipe already up)
2 tbsp green chutney (recipe already up)
3 tsp chaat masala
1/2 tsp cumin seeds
salt and lemon to taste
pomegranate seeds to garnish
Method:
Cut your potatoes into small cubes and put them in salted cold water. Bring to a boil and cook until just fork tender. Drain and let them steam dry.
Then, put them in a bowl and shake a little so they get rough around the edges.
Put in all the ingredients but hold back on the salt and lemon.
Mix to combine and taste. If you want more salt or lemon at this stage, you can add it now. I wait to do this as chaat masala can be quite salty and tamarind chutney can be sufficiently acidic.
Put a small dollop on your papri circles and top with pomegranate seeds and more cilantro.
