Broccoli + Cheddar Galette
an ode to my childhood guilty pleasure- panera i"ll never forget you
My mother has always been very particular about the food we eat as a family, so growing up, we almost never ate out. There was a Panera about five minutes from our house, and I used to always beg her to get lunch there. My personal favorite? The broccoli and cheddar soup in a bread bowl. Something about that salty, cheesy soup soaking into the bread would get me every single time! It was a rare occasion, but I still remember the taste.
This galette is very much inspired by that soup and is honestly one of my favorites that I’ve made. I love making these rustic tarts and experimenting with new flavors- and I’m confident in the fact that I have the best tart dough recipe ever.
I recently switched to using Kerrygold butter, and even though it’s a bit harder to work with as it’s softer and has a higher fat content, the pastry has never turned out flakier! Highly recommend giving it a try if you’re fairly confident handling pastry.

Ingredients:
pastry
180g all-purpose/plain flour
142g cold butter
1/2 tsp salt
5-6 tbsp ice-cold water
veggies
1 onion, finely diced
3 cloves of garlic, finely minced
3 heads of broccoli, roughly chopped
170g spinach, roughly chopped
salt & pepper to taste
1/2 tsp red pepper flakes
1/2 a lemon squeezed
