After a take-out night, I was left with a little too many tortilla chips and salsa verde. Instead of sitting on my couch, crunching on increasingly stale chips, I searched around a bit and found this wonderful Mexican dish called Chilaquiles.
You saute some aromatics, make a salsa, let it simmer on the stove-top, and thicken it down with some stock. Then, you simmer your tortilla chips in it, top with some fried eggs, sour cream, avocado, or any other toppings you want. It’s very easy and very quick- and this is my very loosely inspired version, as I did not make my own salsa, but instead used a really yummy salsa verde and salsa roja I had in the fridge. It’s an way way to make an already easy dish even easier.
I also had some veggies I wanted to use up, so I added those as well. Again, I am not claiming this as an authentic version, but a version of it that I was able to do with what I had in my fridge. It was very delicious. Very very.
Ingredients:
1/2 a red onion, finely diced
1 jalapeno chili, finely diced
1 clove of garlic, finely minced
1/2 a bell pepper, finely diced
