When I was a private chef in the Hamptons, I would make them a weekly granola that would oftentimes be finished by day 5. It was so easy to do, tasted so much better than store-bought granola, and was a hit with everyone.
It’s also so easy to customize with different flavor combinations, so I’d take suggestions and tweak it all the time!
Here’s my GOTW!
The Classic <3
Ingredients:
3 cups rolled/porridge oats
1/4 cup chopped walnuts (a handful really, I hardly measure when I do it)
1/4 cup chopped pecans
1/4 cup flaked almonds
1/4 cup golden linseeds
2 tbsp chia seeds
2 tbsp ground flaxseed
2 tsp cinnamon
1 tsp nutmeg
1 tsp cardamom
1 tsp salt
1/2 cup creamy peanut butter
honey to taste (it depends on how sweet you want it)
a good drizzle of olive oil
1/2 tbsp vanilla paste/extract
1/4 cup cranberries
1/4 cup raisins
Method:
Preheat your oven to 180 C, 350 F.
Line a baking sheet with parchment paper
In a large bowl, mix together all the dry ingredients except for the dried fruit.
Then, add in your peanut butter, honey, oil, and vanilla. If your peanut butter is really thick, microwave it for 30 seconds, and it’ll be a lot more liquid.
Mix to combine and taste to see if you want to change anything. I often adjust sweetness, saltiness, or the spices at this point.
Put on the baking sheet and spread it out flat.
Bake in the oven for 30-40 minutes or until golden brown and crisp.
Halfway through, I take a fork and fluff it around so everything gets evenly coated.
Let cool (it’ll continue to crisp up)
Add in your dried fruit, and once completely cool, store in an airtight container.
