Lime, Passionfruit, Raspberry & White Chocolate Cake
with a salted lime & white chocolate frosting!
I recently asked all my friends and followers what their favorite cake flavors & combinations are. I love baking, and have wanted to do it more lately, so I thought this would be the perfect excuse to just bake a LOT of cakes. First up was my roommate Reagan since her half birthday was last week and I wanted to make her a birthday cake before I leave the UK this fall!
She gave me three flavors: lime, passionfruit, and raspberry and told me to go crazy.
SOOOOO. I made a soft & fluffy lime cake with a passionfruit & lime curd, raspberry & lime puree, lime syrup, and a salted white chocolate & lime buttercream frosting.
The base of this recipe comes from one of my favorite cakes we made in culinary school, and the fillings are some of my favorite curds and purees! It’s a labor of love but everyone absolutely loved it, including me!
I decorated it with some white chocolate filled raspberries, fresh passionfruit, and more of that curd and puree. I was really proud of it and think it looks beautiful! But of course, decorate it as you please.
Ingredients:
Lime cake
360g butter
360g caster sugar
6 medium eggs
450g flour
10g baking powder
