We recently had a housewarming party to celebrate our new flat, and I knew I wanted to make some sort of alcoholic drink everyone could partake in. I always see these put together adults making batch cocktails for their friends and I wanted to do it too ok!!!
However, my university days inspired me and I took a decidedly less classy route and made jello shots instead. BUT! I put the jello in hollowed out lime halves, which means that they’re obviously that much classier… right?
Anyways, here’s the recipe- it was a bit of a mad science experiment but it ended up working out. The amount of gelatin you need varies depends on which gelatin brand you’re using. Always follow package instructions for a specific volume of liquid.
Ingredients
300 ml silver tequila
100 ml lime juice (comes from hollowed out limes)
170 ml water
50-100 grams sugar or honey
a bunch of mint
5 leaves of gelatin
10 limes
Method
Cut your limes in half and hollow out the center. Be careful not to poke a hole. Save the pulp of the limes. Squeeze the pulp to measure out the lime juice
In a pot, combine the tequila, water, sugar, mint, and lime juice.
Put on the stove and gently heat to dissolve the sugar. Taste and add more sugar if needed.
At this time, bloom your gelatin leaves in cold water for 5 minutes. Squeeze all the excess water out when soft.
For my gelatin, I set 570 ml of liquid with 5 leaves of gelatin. Your instructions may vary.
Dissolve the leaves in the warm liquid, making sure that the liquid is warm enough to dissolve it but not so hot that it’s boiling.
Carefully pour the mixture into the hollowed out lime halves, making sure not to overfill. You can put the limes in muffin tins or wrap them with a rope of tinfoil to keep them steady.
Refrigerate until set- I did it the day before the party.
Cut the lime halves in half to create wedges
Optional: I chopped some mint and put it in the mix before I poured it in the limes but you don’t have to. I actually did not like the way it looked LOL.
