Happy New Year everyone!!!!
It feels a little surreal to be ushering in 2025. As always, time is a thief and the clock never stops ticking. Unfortunately, I think I’m at the age where I’m due for an existential crisis every few weeks. I swing from feeling like I’ve accomplished nothing in life to feeling like I have to slow down a bit or I will end up as a burnt-out 25-year-old with premature crow’s feet and eternal eyebags.
Feels a bit dramatic. I’ve been known to be.
I’ve had a lovely 10 days off and I want to thank you guys for being so understanding about me taking a week off Substack! I just wanted to truly relax and unwind, a desire that was probably negated by the many many TikTok videos I posted over the days off. I forgot how much fun it was making food content when I don’t have a full-time job to think about. Maybe one day I’ll make the leap into full-time content creation but for now, I feel it would be almost over-indulgent on my part to just skip over the trials and tribulations of a 9-5. I fear I still require a little oversight in my day-to-day life.
I’m back to work this weekend and I’ve been switched to pastry!! I’ve been on garnish since I’ve started which I definitely got very comfortable with. There’s something comforting about going to work and knowing exactly how to achieve the best result after a fair amount of trial and error.
Now I just have to go through that same process with pastry, an arguably much more difficult section to master due to the technical difficulty. I’ve never been one to back down from a challenge though and this is no different!! I can’t wait to master skills that I’m currently unsure of. It’s one of those tangible things that make me love being a chef so much.
