My mother made this for us all the time growing up and it quickly became my favorite. It’s more of a spiced tofu scramble and is so good and comforting- give it a go!
Ingredients:
1 block of extra-firm tofu
1/2 tsp cumin seeds
1/2 tsp chili flakes
1/4 tsp turmeric powder
1 onion finely diced
3 cloves of garlic minced
1/2 package of mushrooms sliced
handful of spinach roughly chopped
1 tomato chopped
salt to taste
chopped cilantro to finish
Method:
Press your tofu between two plates lined with paper towels with something heavy on top to get rid of excess moisture.
Prep and chop all your veggies.
In a pan over medium heat, put 1 tbsp of oil. Once hot, add in your spices and mix to bloom. As soon as they are fragrant, add in the onions and cook until nice and soft. Then, add in the garlic and cook for 1-2 min more.
Then, add in the mushrooms and cook until all the moisture has evaporated - around 7-8 minutes. They will shrink a lot and caramelize.
Add in your tomatoes and spinach and mix to combine.
Then, take your tofu block and crumble into pieces. Mix with the veggies and season with salt.
Once mixed through and hot, finish the tofu with a squeeze of lemon and a crack of black pepper. Garnish with chopped cilantro.
